Parker Presents: Merroir to You!

It is all about the specific local conditions and sustainable processes from under the sea. Like terroir for wines, think the same concept, just under the sea.

Parker now has two concepts under his banner. The first came from years of working with Bill the Oysterman. (BTW, we all miss him but, the spirit lives on). The other started as a neighborhood service and grew up over the past year. Here are his two current offerings.

Bill Oysterman - continues to bring the best oysters in the west to your table. I work with seven different farms (from British Columbia to Humboldt) keeping close watch of changing conditions and procedures. This is a continuation of a decade’s long tradition here in Santa Cruz. All the house-made sauces and fun you would expect at the bar continue. Private parties and winery events are where you will find him.

Parker’s Picks (PKPX) – Parker directly sources the single best seafood item for that week. It must be exceptional to be chosen. Every week, you can trust the selection is amazingly fresh and the best of class. Think of Day Boat scallops from Nova Scotia or Ahi tuna from Tahiti, all fresh from the overnight flight - you get the idea. Local delivery or pick up is available. On occasion, there will be a second dish offered at the oyster bar to enjoy in the moment. Yes, “hardly strictly oysters” is the theme.

In addition to oysters, Parker will be offering the following:

-Wild Gulf shrimp cakes with remoulade and red radish relish. Golden brown Gulf of Mexico shrimp cakes with just enough panko breading to hold together. Served with PKPX special updated remoulade sauce and a red radish (watermelon type) relish for a little kick. $18

-Key Lime Pie. The real deal made with an almond-graham cracker crust. Topped with crème fraiche. As my daddy used to say, “it will do you good and help you too,” $7
